TANK CONDITIONED LAGERS
These beers take time, and dispensing is no exception. Enjoy the wait! Served as a 3 Stage or Milk Pour (-$1) upon request. We use specialty dispensing taps to serve our Lagers. This faucet allows us to pour liquid multiple different ways. 3 stage is our house standard "hard pour" procedure to allow the beer to breath and build foam. Milk pour exaggerates this process in one pour, softening the carbonation even more and accentuating the sublety of Lager brewing.-
Sanity Czech Pilsner 5% - $7 14oz
Czech Pilsner malt, Czech Saaz hops, and an imported Czech lager yeast. Decoction mashed, Naturally carbonated and lagered 6 weeks. Served straight off the tank! Tapped/Canned 7/11/24

Amber Knight Amber Lager 6% - $7 14oz
Amber Knight is our take on a Bohemian Style Amber Lager. Imported Czech Pilsner malt and Munich Light decoction mashed, then a small blend of specialty dark malts added before lauter. Hopped throughout with Fresh crop CZ Saaz hops, and fermented with Czech lager yeast. Malt forward and balanced with the Saaz additions and a medium dry finish. Tapped 6/13/24

King of the Ville 5.3% - $4 10 $7 18oz
Our version of this American classic is built with a blend American grown pilsner malt, toasted rice, flaked corn, and Chit malt, decoction mashed and a very light hand of bittering hops. Fermented clean and dry with Lager yeast, and lagered in our horizontal serving tanks. A hint of sweetness for the corn, but not much character overall as designed. An absolute crusher! Tapped/canned 5/30/24

Gringo Mexican Lager 5% - $7 14oz
Our take on a Mexican style Lager starts with some American pilsner malt, flaked corn, and a touch of Vienna malt. A bittering addition of Czech Saaz and a flavor & whirlpool additions of New Zealand Wakatu, layering in a hint of Lime and fresh citrus. Fermented cold and under pressure with yeast from the well known Modelo Group. Incredibly soft mouthfeel from the natural carbonation, perfect balance from the Saaz. Served with a lime on request.

Domestically grown "Bavarian Pilsner" malt that was decocted for increased malt character, setting the stage for heavy hot side additions of GR grown Huell Melon and Saphir. Fermented under pressure with our house German Lager yeast, this easy drinkin Pils has an assertive bitterness and a snappy finish, with subtle aromas of lime zest and fresh cut cantaloupe. German Pilsner malt, French Triskel hops, and German Lager yeast. This simple recipe was shared with our brewer by the brewers at BierwerkZüri of Zürich, Switzerland! Our first intercontinental Lager of 2024, and our first international Collab! Tapped/Canned 3/27/24

IntegraChinook IPA 6% - $7 14oz
This beer is influenced by the IPA's of the early 2000s found in the Pacific NW. A clean slate of Pilsner malt and a touch of wheat move aside for a hop showcase of Chinook. Thorough integration of hop additions throughout the process builds a depth of character for the hop lover! Chinook pellets, Chinook Cryo, and a whole cone dry hop amount to a resin and pine with an underlying grapefruit pith. Assertive but not astringent, finishing dry to bring you back for more! Glitch Belgo-American IPA 7% - $8 14oz
A hybrid style showcasing new school hopping techniques with a classic yeast fermentation. Belgian Pilsner malt with malted wheat and Chit malt, mash hopped with Hallertau Blanc, and a generous Belgian candy syrup addition in the boil. Whirlpooled with Citra, Amarillo CGX, and a new hop variety Elani. Fermented warm with Belgian yeast, and dry hopped toward the end of fermentation with the same blend and Liquid Citra. More Liquid Citra added at transfer for brightness and aroma! Tapped/Canned 6/26/24

A deliciously Dank IPA brewed in cahoots with our buddy Charlie from Dry Creek Cannabis! A blend of Pilsner malt, oats, and wheat lay a silky base for a hopping of Strata, Michigan Columbus, and NZ Nelson Sauvin CGX. Top note addition at dry hop with Gelato Terpenes, adding a fresh waft of goodness to the nose! Does not contain THC, CBD, Or any other psychoactive compounds! Juicedratix 2023 Triple IPA - 10.3% $7 10oz
Our Anniversary beer celebrating year 3 takes our IPA findings from the year and wraps it into this big fellah. Pils and Pale malts with malted oat, flaked oat, and malted wheat set the stage. Mash hopped with Cascade and Nugget Hash, hot side additions of Simcoe and Amarillo CGX, and a fat cool whirlpool of Phantasm, NZ Motueka, and NZ Revolution blend. Fermented with Thiolized yeast, and dry hopped at then end of fermentation with Nelson Sauvin Hopkief, Mosaic and Citra Spectrum, Strata, NZ Motueka, and NZ Riwaka CGX. Tapped 1/20/24

Twerp Belgian Pale ale 5.3% - $6 10oz
Born in Antwerp, Belgium, this style was created as an answer to the English ales prominent in the region post WW2. Our representation uses Belgian Pilsner malt with just a touch of Munich light for color and body. Bittered with Hallertau Blanc in the mash, and hopped hot side with US Cascade and Willamette. Fermented on the cooler side with a Belgian yeast notorious for Chouffe fermentations keeps the fruity esters at bay, resulting in a relatively clean profile. Tapped 6/26/24

Belgian Blond ale 4.6% - $6 10oz
A contemporary display of this classic style starts with Imported Belgian Pilsner malt with a slight hand of malted wheat and Chit malt. Belgian candy syrup was added to boost alcohol and dry the beer out. Mash hopped with Hallertau Blanc, and kettle hopped with Hallertau Mittelfru, Amarillo, and coriander at end of boil. Fermented warm with Belgian yeast to help inhibit fruit-forward esters, delivering a delicate bitterness that increases drinkability! Tapped 6/26/24

An all Pilsner malt, 5 hour boil Barleywine that we aged in house for 28 months in a French oak California Grgich red wine barrel. Brown sugar, Toffee, Caramel, and baking spices lead into a dark fruit jamminess, finishing with just a touch of tannin. Brewed 8/25/21 Tapped/canned 3/27/24

Tart Saison 4.7% - $6 14oz
A simplistic grist of domestic Pilsner and Wheat malts, lightly mash hopped with Cascade, and lightly kettle hopped with CGX Idaho7. Fermented with a blend of Brettanomyces, Saccharomyces, and Lactic Acid Bacteria from Jester King Brewery in Texas. A pleasant acidity with very mild funkiness, this drinks more like a fruity sparkling white wine than a beer! Tapped 5/16/24

Rons Margarita Sour Ale - 8% 16.9oz bottle
This Imperial sour ale aged in house for 7 months in our Añejo Tequila barrel. We then conditioned it on fresh lime zest and raw Agave. Significant oak and a touch of smoke from the barrel blends well with a refreshingly tart and lime zip, while the Agave mellows the finish. A perfectly crafted Margarita in beer form!

Belgian style Tripel aged 12 months in house in French Oak Grgich Cabernet Sauvignon barrels. Vine ripened dark grapes and a rich honey sweetness from the Belgian malts sit mid palate, finishing with a jammy quality but also dry from the oak and tannins. Chardonnay Barrel Aged Candi - 8% 16.9oz bottle
Belgian style Tripel aged 9 months in house in French Oak Chardonnay barrels. The residual sweetness from the Belgian malts balance well against the barrel tannins. Fresh white grapes, pear, and melon all harmonize with a noticeable malty sweetness on the back of the palate, finishing very fresh and relatively dry.
